Apple and Cinnamon Oat Cookies

As autumn approaches, these oat cookies are gently spiced and wonderfully warming — perfect for enjoying under a blanket with a glass of milk. Simply delicious.

I N S T R U C T I O N S

  1. Preheat oven to 175°C. Line 2 18x13” baking tray with baking paper.

  2. In a mixing bowl whisk your flour, oats, cinnamon, bicarbonate of soda and salt.

  3. In a separate bowl, soften down you butter. Add this to your dry mix along with a whisked egg and vanilla extract.

  4. Once mixed, add in your apples and lemon juice.

  5. Once well mixed, grab a tablespoon measurement. You’ll be placing 2tbsp worth on your baking paper for each cookie and flattening it a little. Leave enough room between the cookies.

  6. These will go in the oven for 14 minutes.
